Delicious salad. Good use of leftover celery, which is pretty harsh raw, unless you cover its flavor significantly, which is the key to this salad! This takes almost no time to prepare, and we had all ingredients on hand (except the mayo). If I had a camera handy – I’d take a photo of me eating one!
Waldorf Salad (for One)
Half apple, chopped (probably best to use a red apple)
2 ribs celery, chopped
¼ c onion, chopped (Optional. I prefer red onion. This measurement is very rough.)
Handful of raisins (Optional)
Some walnuts or pecans, chopped (Optional – I don’t because of a possible allergy)
Dressing:
2 T mayo
1 T Dijon mustard
1 t apple cider vinegar
¼ to ½ t granulated sugar
(apparently you can add an herb, like tarragon, or a spice, such as cinnamon, to the dressing – haven’t tried it)
You probably won’t need all the dressing – depends on your taste.
(notice difference between “T” and “t” … tablespoon and teaspoon, respectively)
